This fiery and mineral Aszú from a good vintage has great ageing potential. Brilliant gold with amber reflections. A herbaceous nose with hints of fennel harmonises with the creaminess of the wine and the flavours of candied citrus, green apple, dried figs and prunes.  

Food and wine matching:
– Bresaola or older Jamón Iberico de Bellota, breast of pigeon or quail, roasted rare, with a deep jus.
– A real English Christmas pudding or mince pie,
– Spanish Cabrales blue cheese (made from goat’s milk)
– Stilton, very mature Parmesan or Pecorino,
– mousse de foie gras de canard and game terrine with dried fruit.
